Pasta al Limone with green asparagus
A fresh and light vegan pasta dish, where green asparagus, lemon and a protein-rich sauce combine to create a balanced meal for everyday life or a training day.

Preparation time: 20 minutes
Cook the pasta in boiling salted water according to the package instructions until al dente. Drain and reserve a little of the cooking water.
Cut the green asparagus into pieces about 3–4 cm long. Squeeze or chop the garlic.
Heat a large frying pan and add a little oil. Sauté the asparagus and garlic over medium heat for about 5–7 minutes, until the asparagus is cooked but still firm.
Grate the zest of an organic lemon and squeeze the juice. Add both to the pan with the asparagus and sauté briefly.
Mix 3K Protein Cream with a small amount of plant-based drink (e.g. oat or soy drink) until the mixture is smooth. Remove the pan from the stove and pour the mixture into the pan. Mix well.
Add vegan parmesan and a little pasta water if necessary to make the sauce nice and creamy. Season with salt and pepper.
Add the cooked pasta to the pan and mix everything thoroughly.
Divide the portions, finish with vegan parmesan or fresh lemon zest if desired – and enjoy!

- 250 g pasta, e.g. spaghetti
- salt and pepper
- 250 g green asparagus spears
- 1 clove of garlic (or to your taste)
- oil
- 1 organic lemon
- 40 g 3K Protein - Cream
- 530 ml plant-based drink
- 25 g vegan parmesan
