Vegan silken tofu cocktail
This vegan omelet is a rich and high-protein alternative to traditional scrambled eggs. Silken tofu adds softness and firm tofu texture.

Add the silken tofu along with the protein powder, turmeric, kala namaki, salt and pepper to a blender. You can also make it without the kala namaki so the taste is not as eggy.
Crumble the firm tofu into small pieces by hand.
Chop the onion into small cubes and add it to the silken tofu mixture mixed with the firm tofu.
Heat the oil in a pan and add the vegan cocktail to the pan.
Cook the mixture over medium heat, stirring occasionally. Give the vegan scrambled eggs time – they will take a little longer to cook, but the wait will be worth it.
Once the desired consistency has been achieved, serve the vegan cocktail with fresh chives.

- 300 g silken tofu
- 100 g firm tofu
- 30 g 6K protein powder (unflavored)
- 1 small onion
- a generous pinch of fish sauce
- a little salt, pepper and turmeric
- fresh chives
- 1–2 teaspoons neutral vegetable oil
